Finished/Gave up on writing dbt tests using mocking

- Tried using the dbt-unit-test package which turns out is very poorly documented. After about 4 hours I gave up. There is a proposal feature to add unit testing to dbt in 1.8 - https://github.com/dbt-labs/dbt-core/discussions/8275
